Baking Carrot Cake

This is my recipe for making carrot cake, which is a favorite among family and friends.

2 cups all purpose flour
1 3/4 cups brown sugar
2 tsp. baking powder
1 1/4 tsp. ground cinnamon
1/4 tsp. ground nutmeg
4 eggs
3/4 cup cooking oil
1 tsp. vanilla
1 orange (juice only)
3 cups shredded carrots
1 cup raisins
1 cup chopped walnuts

Preheat oven to 350° F.
Grease and flour a baking pan, set aside.
In a large mixing bowl combine flour, sugar, baking powder, cinnamon and nutmeg. One by one, add in the eggs, mixing after each one. Add the cooking oil, vanilla and orange juice. Mix until well combined.
Last, stir in with a wooden spoon the carrots, raisins and walnuts.

Pour the batter into the baking pan and bake for about 50 minutes.

Cream Cheese Icing:
In a bowl mix together until well combined 6 oz. of softened cream cheese, 6 oz. of powdered sugar and 1/2 bar of unsalted butter.

When the cake is cool, cover with the icing and enjoy!
